Green Deviled Eggs and Ham

Would you like to know my deep dark secret?

My greatest accomplishment in the kitchen was the day I learned how to hard boil an egg. After years of breaking egg whites as I painstakingly shed away at the evil shell, and cursing the heavens every time I got one unpeeled only to discover a green rim around the yolk, I finally figured it out. Nothing beats slicing open a warm egg to find a soft and billowy yellow yolk… to stuff in my face. Sometimes, the easiest things are the hardest to master. Which brings me to my next greatest achievement: making a perfect deviled egg.

A good deviled egg can be made with as little as 4 ingredients: eggs, mayonnaise, relish, and paprika. But a perfect deviled egg requires a little more love and creativity. Take Mario Batali’s riff on a classic Hellmann's® recipe called Fiery Chipotle Deviled Eggs. Batali punches up the flavor by adding chipotle hot sauce, spicy mustard, cilantro, and celery salt. And wow, they are good! When I was asked to create my own version of Mario’s recipe to celebrate Hellmann's®100th birthday, I jumped at the chance, and you can too! Just visit Hellmann’s Facebook contest app page to participate in the fun. Not only does Hellmann's® use quality ingredients (like cage-free eggs), but they are helping to provide one million meals to Feeding America to help the fight against hunger nationwide. I am proud to support this endeavor and spread the news!

Check out my take on Mario’s recipe I like to call Green Deviled Eggs and Ham. It was inspired by two men who have inspired me throughout my life, Mario Batali and Dr. Seuss. And ya’ll know how much I love avocado and bacon. It could be deemed a problem if we wanted to get technical. But this isn’t a place for technicalities. It’s a place of love. So, let’s embrace my addictions.

Tip: Don’t have a deviled egg tray to keep the eggs from rolling around? There is no need to buy a special platter. Sprinkle your favorite greens on a serving dish, and nestle the deviled eggs in place. It’s colorful and edible!

How to make perfect hard boiled eggs:
  1. Place eggs in a single layer in a saucepan; cover in cold water.
  2. Brings to a boil, uncovered.
  3. As soon as it comes to a FULL boil; cover, remove from heat, and let stand for 10 minutes.
  4. Drain immediately and fill the pan with cold water and ice; allow the eggs to become cool to the touch.
  5. Tap each egg, big side down, on the counter until it cracks; peel under cold running water.
Green Deviled Eggs and Ham
Makes: 12 halves
Prep time: 15 minutes
Cook time: 15 minutes

Ingredients:
  • 6 large eggs
  • ¼ cup Hellmann's® Mayonnaise Dressing with Olive Oil
  • 1 ripe avocado, diced
  • 1 tablespoon sweet pickle relish
  • 1 tablespoon sriracha hot sauce
  • ¼ teaspoon salt (to taste)
  • 4 strips crispy bacon, diced
  • ¼ cup fresh chives, chopped
  • 1 cup arugula (optional, for garnish)
Directions:
  1. Slice eggs in half lengthwise and carefully remove yolks.
  2. Place yolks in a large bowl with Hellmann's®, avocado, relish, sriracha, salt, half the bacon, and half the chives; mash until smooth.
  3. Spoon mixture in to a plastic bag, squeeze out the air, and seal. With scissors, snip off one of the corners of the bag by ½ inches to create a piping bag. Pipe yolk mixture in to egg white halves liberally (the avocado adds a little extra filling so you can “over-stuff” each egg white)
  4. Garnish each with bacon bits and chives.
And don’t forget to submit your own recipe here! You could win a trip to New York City!

Bacon Guacamole

So, here's the thing. Bacon is so played out in the food world right now. We have bacon chocolate bars, bacon oil, bacon salt, bacon print band-aids, and bacon sundaes at Burger King. There is even a small restaurant in Austin, Texas called Bacon that serves, well, everything bacon (try the the bacon doughnut...just do it). Some truly sad souls people have a difficult time understanding why bacon should play such a leading role off the breakfast table. I say everything should taste like bacon. Bring it! Here is my small contribution to our over-saturated bacon kingdom, Bacon Guacamole .   I actually shed a tear when I tasted this. You can thank me later... Grilled Asparagus Salad with Fried Quail Eggs

The Baltimore Farmer’s Market was beaming with pride as the stalls opened for the season on Sunday morning, and it has good reason to be prideful. It was recently voted #1 Farmer’s Market in the nation by Country Living.   Since it was 7:00 am after a long night out I was appropriately armed with coffee, sun glasses, and hippy-ass reusable tote bags. Asparagus has been in the forefront of my thoughts since eating a memorably crisp asparagus salad at Woodberry Kitchen . When I saw a pile of garden-fresh spears I couldn’t resist getting a few bundles for the week as well as my fair share of blue kale, foraged mushrooms, spinach, organic quail eggs, ramps, and a multitude of other goodies.   It is going to be a wonderfully food-filled week. Grilled Asparagus Salad with Fried Quail Eggs utilizes many of the seasonal ingredients I scored at the market. It’s only lightly seasoned to give the ingredients the stage. Fresh tarragon is laced throughout and the yolk from the gently fried

The Gathering: Baltimore's Food Truck Rally

Baltimore, with its big city grit and artistic underbelly, was destined to become an integral part of the Food Truck Nation. Over the last few years, gourmet food trucks have been popping up everywhere from LA to Austin, but mobile catering has been around since the beginning of times.   Coupled with the weakened economy and people’s undying need for great street food, we find ourselves at a fortunate cross road. We can eat gourmet food on the street. Lucky us. Talented chefs and savvy business people are all getting with the trend. The newest generation of food trucks are classing it up and getting experimental with menu items like crab fries and Korean tacos.  Baltimore’s food truck scene has grown over the last two years, and The Gathering propels the movement forward by forming a food truck rally that competes on a national scale. Lamb vindaloo? Check. Fish tacos? Check. Creamy soft serve and pretty cupcakes? Check.  This all happens within a small city
