Bootylicious Peach and Tomato Salad

 
The end of summer is always bitter sweet, but the sweet side is über tasty. Farmers markets are packed with ripe fruits and vegetables in every shade. Like big booty girls stuffed in to tight jeans, peaches and tomatoes are plentiful and bursting at the seams with flavor. That’s exactly what inspired this simple recipe (the fresh fruit, not the derrières).  

Bootylicious Peach and Tomato Salad

Ingredients:
  • 1 pint of cherry tomatoes
  • 2 peaches
  • 1 big handful of fresh basil
  • ¼ small red onion
  • ½ tsp salt
  • Pinch of black pepper
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons of apple cider vinegar
  • 1 tablespoon agave nectar (or honey)
  • 3 dashes of tarragon vinegar
Directions: 
  1. Cut the cherry tomatoes lengthwise. 
  2. Slice each peach in half and discard the seed. Dice the peaches in to 1/2 inch pieces. 
  3. Finely dice the red onion so very small pieces make their way through the finished salad. 
  4. Hand shred the basil in to large pieces. 
  5. Whisk the olive oil, vinegars, salt, pepper and agave until incorporated. 
  6. Toss the salad with the dressing and enjoy.

Bootylicious Peach and Tomato Salad is best enjoyed immediately or within a few hours.

  2. I'm sad to see summer go too. Well kind of, won't miss the 100+ degree weather. Love your salad recipe. I imagine the peach's sweet play off the bite of the red onion and tang of the vinegar really makes this dish sing. Will give it a try soon.

A Recipe to Fall For

Some recipes evoke an absolute carnal lust in me that transcends reasoning. My mouth waters frenziedly, my eyes get big, and my smile widens with the anticipation of the feast. Grilled Asparagus Salad with Fried Quail Eggs

The Baltimore Farmer’s Market was beaming with pride as the stalls opened for the season on Sunday morning, and it has good reason to be prideful. It was recently voted #1 Farmer’s Market in the nation by Country Living.   Since it was 7:00 am after a long night out I was appropriately armed with coffee, sun glasses, and hippy-ass reusable tote bags. Asparagus has been in the forefront of my thoughts since eating a memorably crisp asparagus salad at Woodberry Kitchen .
