Dining in Texas Hill Country

Eating is something I take great pleasure in. Whether I’m cooking, testing a new restaurant or enjoying an old standard it’s the exploration of flavors, smells and the environment that fill me with deep happiness. Last night, the rents and I found our way to Trattoria Lisina in Driftwood, Texas. Driftwood is situated in the Texas Hill Country just outside of Austin and close to my parents’ home in Buda. Famous chef Damian Mandola built Trattoria Lisina and the neighboring Mandola Winery from the ground up. This is his baby and it shows.

Trattoria Lisina’s setting alone would have even the most anxious nut relax in to the landscape. Upon entering the front gate we were greeted by a family of deer to the left and beautiful rows of young grape vines to the right. The restaurant is surrounded by gardens filled with native Texas plants and flowers. You can buy a bottle of wine (or two) and relax in the gardens while you wait to be seated.

It’s packed every night with folks who need an experience. The dining room is studded with hat wearing cowboys, typical, and women dressed in their Sunday best. Don’t get me wrong, you can come to Trattoria in your favorite pair of skinnies and still get seated but people seem to want to get dressed up when they come to this place. The food warrants it.

Now begins the foodie’s wet dream. Make sure you get a hearty glass of Chianti to enjoy with your meal because, baby, it only gets better from here. My parents started their meal with a fresh basket of focaccia bread and olive oil, and I ordered a meaty charcuterie platter, a perfect starter for someone who cannot eat dairy or gluten (if you are eating alone ask for the platter sans cheese). The appetizer was lightly dusted and fried calamari with two gloriously sweet and spicy dipping sauces. Mom ordered an Al Funghetto pizze, Dad had lasagna and I, well, the osso bucco, of course! It was a beefy, tender, melt-in-your mouth experience that I could repeat again and again. I shared the bone marrow treat with the parents who had to take a sip of water after enjoying the gelatinous nibble of the gods. Trattoria serves copious amounts of gourmet fare so be prepared to bring a little home with you.

In fact, I think I’m having osso bucco for breakfast…

Bacon Guacamole

So, here's the thing. Bacon is so played out in the food world right now. We have bacon chocolate bars, bacon oil, bacon salt, bacon print band-aids, and bacon sundaes at Burger King. There is even a small restaurant in Austin, Texas called Bacon that serves, well, everything bacon (try the the bacon doughnut...just do it). Some truly sad souls people have a difficult time understanding why bacon should play such a leading role off the breakfast table. I say everything should taste like bacon. Bring it! Here is my small contribution to our over-saturated bacon kingdom, Bacon Guacamole .   I actually shed a tear when I tasted this. You can thank me later... Grilled Asparagus Salad with Fried Quail Eggs

The Baltimore Farmer’s Market was beaming with pride as the stalls opened for the season on Sunday morning, and it has good reason to be prideful. It was recently voted #1 Farmer’s Market in the nation by Country Living.   Since it was 7:00 am after a long night out I was appropriately armed with coffee, sun glasses, and hippy-ass reusable tote bags. Asparagus has been in the forefront of my thoughts since eating a memorably crisp asparagus salad at Woodberry Kitchen . When I saw a pile of garden-fresh spears I couldn’t resist getting a few bundles for the week as well as my fair share of blue kale, foraged mushrooms, spinach, organic quail eggs, ramps, and a multitude of other goodies.   It is going to be a wonderfully food-filled week. Grilled Asparagus Salad with Fried Quail Eggs utilizes many of the seasonal ingredients I scored at the market. It’s only lightly seasoned to give the ingredients the stage. Fresh tarragon is laced throughout and the yolk from the gent...

“My Sweet” Chorizo Con Papas Bake

In the food world some things just belong together.  Peanut butter and jelly.  Macaroni and cheese.  Sweet potato and chorizo… rewind… sweet potato and chorizo? Yes, indeed. Sweet potato and chorizo is the ultimate pairing. One is sweet, unassuming and full of wholesome integrity. The other is spicy, daring and playful. When you put the two together it’s like Romeo and Juliet living happily ever after. It is the just ending to a rebellious love affair. This combination was originally conceived in Latin America with a humble dish called chorizo con papas traditionally served in a soft tortilla at breakfast time. I was like a conquistador conquering new land as I rummaged through the fridge craving breakfast for dinner. Laid out in front of me was Mexican chorizo, fresh cilantro, eggs and baby sweet potatoes. The perfect ingredients for what turned out to be the one of the best concoctions ever made in my kitchen.   My Sweet Chorizo Con ...
